Healthy and Nutritious

Zucchini is low in calories but high in essential vitamins and minerals, making it a great base for these pizza bites. “The summertime is the best time to try zucchini,” says Elizabeth White, registered dietician with Southern New Hampshire Weight Management. “It is in season and at the peak of freshness and taste.” Using turkey pepperoni and reduced-fat mozzarella cheese keeps the snack lighter while still providing that classic pizza taste.

Quick and Easy

This recipe is straightforward and can be whipped up in under 20 minutes. It’s perfect for those times when you need a quick and satisfying snack.

Versatile and Customizable

Feel free to get creative with your toppings! You can add mushrooms, bell peppers, onions, or even a sprinkle of red pepper flakes for some heat. The possibilities are endless.

Perfect for Any Occasion

Whether you're serving these as a fun appetizer at a party or enjoying them as a solo snack, Zucchini Pizza Bites are sure to impress. They are a great way to introduce more vegetables into your diet in a fun and delicious way. “Local Farmer’s Markets are a great way to find the most flavorful vegetables around,” shares White. “It is fun to find different vegetables and different ways to cook them too.”

So, next time you're craving pizza but want to keep it healthy, give these Zucchini Pizza Bites a try. They're a delightful combination of fresh zucchini, savory marinara, melted cheese, and flavorful pepperoni that will leave you wanting more.

  • 1 Tbsp olive oil
  • 3 zucchinis, cut into 1/4 inch thick rounds
  • Kosher salt and freshly ground black pepper, to taste
  • 1/3 cup marinara sauce
  • 1/2 cup reduced fat, finely grated mozzarella cheese
  • 1/4 cup turkey pepperonis
  • 1 Tbsp Italian seasoning

1. Preheat Your Oven

Start by preheating your oven to broil. This high heat will help melt the cheese and give your zucchini rounds a deliciously crisp top.

2. Prepare the Zucchini

Heat the olive oil in a large skillet over medium-high heat. While the skillet heats up, slice your zucchini into 1/4-inch thick rounds. Working in batches, add the zucchini slices to the skillet. Cook each slice for about 1-2 minutes on each side or until they turn a beautiful golden color. Don’t forget to season with a pinch of kosher salt and freshly ground black pepper to taste.

3. Assemble the Pizza Bites

Once the zucchini rounds are cooked, place them onto a large baking sheet. Top each zucchini slice with a small spoonful of marinara sauce, followed by a sprinkle of mozzarella cheese, and finish with a few turkey pepperoni minis.

 4. Broil

Place the baking sheet in the preheated oven and broil for about 1-2 minutes or until the cheese has melted. Keep a close eye on them to prevent burning.

5. Serve and Enjoy

Remove the zucchini pizza bites from the oven and serve immediately. For an extra burst of flavor, sprinkle them with Italian seasoning. Enjoy these delicious bites while they're hot!
